Vegan Burrito Bowls Meal Prep Gluten Free

Today we have something a little bit different. Today we do a meal prep. Whats good about it its that it is 100% vegan and gluten free. Do not store it for more than 7 days.

Ingredients:

Garnish

  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 2 tbsp chili powder
  • 2 tbsp ground cumin
  • 2 tbsp salt
  • 2 tbsp red pepper flakes

Chicken Burrito Bowl

  • 1/2 cup uncooked brown rice
  •  4 chicken breasts
  • tbsp olive oil
  • 4 cups shredded Romaine lettuce
  • 2 cup cherry tomatoes
  • 14 oz can corn kernels
  • 1 cup shredded cheese
  • 1 cup salsa.

Sweet Potato Burrito Bowl

  • 1/2 cup brown rice
  • 12 cups sweet potato
  • 3 tbsp olive oil
  • 2 red onion
  • 2 bell pepper
  • 38 oz can black beans
  • 1 cup greek yogurt

Preparation:

Chicken Burrito Bowl

  1. Mix the garnish and the rice with cooking oil.
  2. Heat your oven to 425F. Put some olive oil on the chicken, and add some of the remaining garnish.
  3. Bake the chicken for 10 minutes. Flip it and then bake another 10 minutes.
  4. Once cooled, chop the chicken into slices.
  5. Prepare the veggies and cheese. Divide it to 4 containers.

Sweet Potato Burrito Bowl

  1. Mix the garnish and the rice with cooking oil. Cook the rice.
  2. Heat the oven to 425F. Put olive oil and spice on the potatoes and bake them for 10 minutes.
  3. Add the onion and bell pepper slices while the potatoes are roasting.
  4. Divide all the ingredients to 4 containers.
